Recipe: Pea and Pesto Soup

To kick off a few weeks of healthy eating I'm making some quick, easy and yummy soups to take to work with me for lunch. I've just knocked up a batch of this delicious Pea and Pesto Soup by Nigella Lawson. It only took about 10 minutes and it smelled so good I had a bowl for dinner! Obviously The Boy's away On Business; I would definitely not be allowed to call a bowl of soup dinner if he was around!

Pea and Pesto Soup
 What you'll need: 

750ml water
375g frozen peas
2 spring onions - trimmed but whole
1 teaspoon sea salt
1/2 teaspoon lime juice
4 tablespoons fresh pesto
Creme Fraiche (half-fat) - optional 

It's easy PEAsy... (sorry, I couldn't resist!)

1. Boil a kettle of water and measure 750ml into a pan on the hob and bring back to the boil.

2. Add the frozen peas, spring onions, salt and lime juice and leave to bubble for 7 minutes.

3. Discard the spring onions and transfer the peas and liquid to a blender. Add the pesto (I used basil pesto from a jar rather than fresh pesto) and blitz the mixture in the blender until it is all liquid.

4. Re-warm and swirl some creme fraiche into the soup. Serve!

(If, like me, you're planning to re-heat the soup, leave to cool after blitzing it in the blender and then transfer to microwave proof containers. Store in the fridge and heat up when you need it, stirring in some creme fraiche if you've got it).
